Slow Cooker Fudge Brownies
These slow cooker brownies are the perfect balance of fudge gooeyness with a crispy top. Serve warm with a drizzle of cream and a handful of fresh berries.
We’ve used the Ninja Foodi Smartlid but you can use any slow cooker.
Ingredients
115g butter
200g sugar
115g milk chocolate
115g dark chocolate
2 tbsp vegetable oil
3 large eggs
1tsp vanilla extract
30g cocoa powder
160g plain flour
Method
Melt the butter (we used the sauce function on the Ninja), add the chocolate and continue to melt, when almost there stop the heat.
Add the sugar and oil and stir well.
Add the vanilla essence and slightly beaten eggs and quickly combine, you don’t want the eggs to cook here.
Add the flour and cocoa powder 1/3 at a time and combine well.
Cook on slow cooker mode, HIGH for 4 hours. Top tip - do not open the lid.
Leave to cool completely and remove from the pot (use a plastic slice or similar to avoid scratching the pot.
Serve with cream and fresh berries.
