Hearty Potato and Leek Soup
This hearty pressure cooked potato and leek soup is the perfect comfort food served with fresh homebred bread and lashings of butter. See our other YouTube Video for a great white loaf that goes perfectly with this soup.
We used the Ninja Foodi Max but you can use any pressure cooker or even swap for a slow cooker (just adjust your timings).
Ingredients
450g potatoes
2 large leeks
750ml Stock (i had some left over from cooking a roast chicken but you can use a stock cube or pot)
Small knob of butter
Salt
Pepper
Garnishes (I used Single Cream and Parsley)
Method
Cut up leeks and potatoes
Melt butter and gently sauté the leeks and potatoes. this isn’t to really add colour more to get them slightly warm and coated in the melted butter.
Add the stock and salt and pepper to taste.
Pressure cook on high for 8 mins.
Cool slightly and remove a few chunks of leek and potato then liquidise. I used a hand blender because i like seeing the consistency but any blender will do.
Add further seasoning to taste and any garnishes you want.
