Pressure Cooker Risotto

No Stir Bacon and Pea Risotto


If you love risotto but don’t like the constant stirring it takes to make it try this pressure cooker version. We’ve served ours with bacon and peas but you could do any combination of toppings. The pressure cooker means the rice is perfectly cooked and the flavour is amazing as all the stock absorbs into the rice.


We’ve used the Ninja 15 in 1 Smartlid for this recipe but any pressure cooker will work





Ingredients


5 bacon slices chopped into pieces

30g butter

1/2 red onion

1/2 clove garlic (I use lazy garlic instead)

250g Arborio rice

1L stock ( I used beef)

100g frozen peas

1 tsp salt

1/4 tsp black pepper

60ml whole milk or cream

Grated cheddar and spring onions to garnish



Method


Cut your bacon into pieces about 1cm


Dice for onion.


Saute the bacon until brown and crispy, set aside.


Add the butter and onions and saute for a minute then add the arborio rice and stir into the butter/onion mix and sauce on low for 2-3 mins.


Add garlic, salt and pepper and the stock and stir well.


Cook on HIGH pressure for 6 mins with QUICK RELEASE


While rice is cooking microwave peas.


Combine peas into rice and serve with the bacon on top and some grated cheddar and spring onions to garnish.
