Pressure Cooker Beef Stew with Dumplings


This beautiful beef stew and dumpling dish is ready in under an hour from start to finish. It’s the perfect winter dish to enjoy on a lazy Sunday.


We used the Ninja Foodi Max but you can use any pressure cooker or even a slow cooker if you have one. Just adjust your timings if using the later.



Ingredients


800g Diced Beef

1tbsp plain flour to dust the beef

Salt and pepper to season

3tbsp olive or vegetable oil

1 onion

4-6 carrots

2 sticks of celery

1 leek

800ml Beef stock

1 tbsp tomato puree

1 tsp wholegrain mustard

1 bouquet garni

Dumpling mix


Method


Chop up all your vegetables.


Toss your beef in the plain flour to coat.


Warm up your olive oil and sear the beef pieces (we did it in two batches).


Make up your beef stock and deglaze the pan. Add your veg, beef, tomato puree, mustard and bouquet garni, season with salt and pepper, then mix.


Pressure cook on high for 35 mins with natural release of steam.


When the stew is cooked give it a stir and then mix up the dumpling mix and place on top of the stew. Air Fry for 10 mins until the dumplings are cooked and brown on top. If using a slow cooker you can remove some of the gravy from the stew and pop the dumplings on top then either air fry or oven bake. I find this gives that soggy bottom and crunchy top.
