Fry Up Fritata

This beautiful take on a frittata takes the components of an english fry up and combines them into one pot easy to eat on the sofa on a lazy Sunday. We cooked the fry up ingredients as needed but you could easily use this recipe to make use of leftovers.

We used the Ninja Dual Airfryer but you can use any air fryer, here are our favourites.

Ingredients

2 frozen hash browns

2 tbsp baked beans

3 slices streaky bacon

1 small sausage

4 eggs

Salt and pepper to season

Chopped chives and vine tomatoes to serve

Butter spray

Method

Cook the bacon, sausage and hash browns in the air fryer until ready, set aside to cool slightly.

Meanwhile whisk the 4 eggs and add some salt and pepper to season.

Roughly chop the bacon, sausage and hash brow, then add (reserve some of the crispy bacon to garnish) then to an oven proof dish with the baked beans and eggs. Stir through.

Air fry until the eggs are cooked through. Approx 14 mins (check after 8 mins and add foil to cover if looking brown enough already).

Leave to rest in the air fryer for 5 mins at the end.

Serve with chopped chives, vine tomatoes and lashings of ketchup.
