Air Fryer Chicken Tray Bake

The Ninja Flex Drawer is perfect for making simple one tray meals. This chicken traybake is great to have in your recipe book as you can change things up by adding whatever herbs and spices you have in the cupboard.


We used smoked paprika and mixed herbs in this version but you could use lemon and garlic, curry powder, Piri Piri, whatever you fancy.

 





Ingredients

4 chicken breasts

3 Onions

1 courgette

Pack of Vine tomatoes

1 pack of New Potatoes

2 tbsp olive oil

Salt and black pepper


For the herb oil:

3 tbsp olive oil

Salt and black pepper

Dried herbs/spices (we used 2tsp mixed herbs and 2tsp smoked paprika).



Method


Roughly chop the vegetables (onion and courgette)


Make some herb oil by mixing 3 tbsp olive oil, salt and black pepper and your choice of herbs and spices (we used 2tsp mixed herbs and 2tsp smoked paprika).


Toss the vegetables in the herb oil (reserving about 1/3 for the chicken).


Chop the new potatoes and coat in 2 tbsp olive oil and add a generous amount of salt and black pepper.


Place the potatoes, herb covered vegetables and chicken into the tray of the Flexdrawer. Cover the chicken breasts in the remaining herb oil.


Select MEGAZONE on your Ninja Flexdrawer (or other Air fryer). Choose Roast and set to 190C/375F and cook for 15 min.


After 15 mins mix the potatoes and veg and flip the chicken breasts over. Cook for a further 15 mins, then add the tomatoes.


Finally cook for a further 5-10 mins until the everything is cooked through and the tomatoes begin to burst.


Serve straight from the tray into bowls.
